3 Ingredient HEALTHY Pancakes

Now that I’m home all the time for breakfast, I’ve been trying to come up with some different breakfast ideas that are satisfying yet healthy. These 3 ingredient pancakes are super easy to make have no added flour or sugar.
Ingredients:
- 1 Egg
- 1 Banana
- 1 tablespoon of Chia Seeds
Okay I know I said 3 ingredients, and that’s all it really takes, but I like to add some vanilla and cinnamon to make them a little special. Trust me, it makes a difference!

Instructions:
Add the egg, banana, chia seeds, a pinch of cinnamon, and a dash of vanilla into a blender and mix until smooth. This takes about 45-60 seconds. Spray a nonstick pan with cooking spray, and pour the batter into the pan to form mini pancakes (I use about 2-3 tablespoons of batter per pancake). Cook the pancakes over medium heat and cook for about 60-90 seconds per side. Repeat until you have used up all of the batter. Once all of the pancakes are cooked you can top with syrup, butter, or fresh fruit. My favorite is to mix a little of all three in a pan and cook on the stove (while the pancakes cook) to create a jam-like consistency. You can also check out my fruit compote recipe here.
Enjoy these no guilt pancakes that are easy enough to make on any weekday morning. Just remember to always use salted butter!
