(serves 1)

Do you ever get those salty/ sweet midnight cravings, but have nothing in the house to satisfy them? Well here’s an easy recipe to make a fresh “baked” cookie at midnight with a few ingredients you already have in the house.

It may not look fancy, but this recipe takes 60 seconds to make, 60 seconds to cook, and 60 seconds to eat.

Just be careful not to burn your mouth!

Ingredients:

- 1 tablespoon butter (salted, of course)

- 1 egg yolk

- 1 tablespoon brown sugar

- 1 tablespoon granulated sugar

- 1/4 cup flour

- 1/4 teaspoon of baking powder

- Dash of vanilla

- 2 tablespoons of chocolate chips

Instructions:

Place the butter in a mug and microwave until melted (about 20-30 seconds). Remove from microwave and mix in brown and white sugar. Add egg yolk, vanilla, flour, baking powder and mix again until evenly incorporated. Mix in chocolate chips and microwave for 60 seconds. Let rest for 2 minutes. As the cookie cools it hardens slightly, which gives it that fresh baked crispy exterior and chewy interior.

Eat as is or top with a scoop of vanilla ice cream. Just remember to always use salted butter!
