Broccoli Salad

(serves 6-8)

This is a recipe my mom has made for years and let me tell you, it is certainly a crowd pleaser at parties. A few years back I went to a Friendsgiving where I brought this as a side and it was the first thing to go! I even heard a group of people raving about this salad and saying that they needed to find the person who brought it to get the recipe. Embarrassingly enough, I jumped at the chance to claim this sought after broccoli salad and explained to them how to make it.

The secret is that it’s super easy to make and is even better as leftovers!

Ingredients:

(Salad Base)

- 3 to 4 Broccoli Crowns

- 1 Small Red Onion

- 8oz package of Shredded Cheddar Cheese (fancy shredded)

- 3oz jar of Bacon Bits (I like to use Hormel Real Bacon Pieces - link below)

(Dressing)

- 1 cup of Mayonnaise

- 1⁄2 cup of White Granulated Sugar

- 3 tablespoons of White Distilled Vinegar

Instructions:

Cut the broccoli crowns into small bite size pieces and finely chop the red onion. Then, mix the broccoli, onion, cheese and broccoli in a large bowl. In a smaller bowl mix together the mayo, sugar and vinegar together. Toss the broccoli mix with the dressing until everything is evenly coated. Leave in the fridge to marinate 3-4 hours. The great thing about this salad is the longer it sits the better it gets!

This recipe may not have butter in it, but just a reminder to always use salted butter!
