Dessert Hummus

Yes, you read that right! DESSERT HUMMUS is a thing and it deserves all the recognition! Now, some of you may have seen recipes for chickpea cookie dough and this is similar but it certainly should not be classified as a cookie dough.  While this is a super tasty and healthy snack, you’ll never get that same guilty satisfaction of cookie dough without loads of sugar and butter. 


As you may have noticed from some of my previous blog posts, I have a major sweet tooth and love to bake. With being home much more these days, I’ve been trying to find healthier options to snack on while curbing my sugar cravings. My wonderful coworker sent me a recipe for this “knock-off” chickpea cookie dough and ever since then I’ve been experimenting with different versions of it at least once a week. 

Here I’ve listed my favorite five combinations. Trust me, they’re good - don’t knock it until you try it! 

Ingredients:

Chocolate Chip 

1 can chickpeas 

1/4 cup peanut butter 

2 tablespoons maple syrup 

1/4 teaspoon of vanilla 

1/4 cup mini chocolate chips 

1 tablespoon water


Chocolate Chocolate Chip

1 can chickpeas  1/4 cup peanut butter  2 tablespoons maple syrup  1/4 teaspoon of vanilla  1/4 cup mini chocolate chips 

1 tablespoon coca powder 

1 tablespoon water


Brownie Batter

1 can chickpeas 

1/4 cup almond butter 

2 tablespoons maple syrup 

1/4 teaspoon of vanilla 

1 tablespoon of Nutella

2 tablespoons coca powder 

1 tablespoon water

Snickerdoodle

1 can chickpeas  1/4 cup almond butter  2 tablespoons maple syrup  1/4 teaspoon of vanilla  1/2 tablespoon cinnamon 

1 tablespoon water


Oatmeal Raisin 

1 can chickpeas  1/4 cup almond butter 2 tablespoons maple syrup  1/4 teaspoon of vanilla  1/4 cup oatmeal  2 tablespoons raisins (1oz package)

1 tablespoon water


Tips: 

- Use natural peanut butter/ almond butter to eliminate added sugar - Use pure maple syrup

- Take shells off chickpeas for smoother texture


Instructions:

Rinse and drain your chickpeas in a colander. I strongly recommend removing the outer shell of the chickpeas for these dishes. This is completely optional step, but it definitely gives you a much smoother texture. It shouldn’t take more than 5 minutes and to be honest, I find it to be quite satisfying. 




Blend your chickpeas, peanut butter or almond butter, syrup, water, and vanilla in a food processor until smooth. (For the chocolate chocolate chip/ snickerdoodle options, I also blend in the cocoa powder/ cinnamon.)

Gently stir in your toppings (ie. Chocolate chips, oatmeal, raisins, etc.). 


Pair with some of the below suggestions or just eat it with a spoon! 


Favorite Parings:

- Graham crackers

- Apples Slices

- Strawberries 

- Banana chips 

- Rice cakes (apple cinnamon and chocolate are my favorite)

- On top of pancakes 


There's certainly no butter in this recipe, but if there was it would be salted!
