Roasted Shishito Peppers

(serves 2-4)

This is a super easy and healthy recipe that can be used as a dinner side or even an appetizer. I first had this shishito dish at Seasucker in Las Vegas earlier this year and thought to myself how easy it would be to make at home.
It’s literally 3 ingredients, takes zero prep work, and tastes even better when dipped into a spicy mayo or a semi-homemade aioli.
Ingredients:
- Bag of shishito peppers
- 2 tablespoons of Extra Virgin Olive Oil
- Sea salt to taste
Instructions:
Preheat the oven to 400 degrees. Mix peppers with oil and sea salt in a roasting pan and place in oven. Cook uncovered for 20 mins, tossing half way through. You want these to get a little blackened for that charred taste. From here you can dive right in and serve them topped with a little more sea salt. I absolutely LOVE using Maldon Sea Salt Flakes for a recipe like this (link below).
You can also dip the peppers in a spicy mayo (1/4 cup of mayo + 1 tablespoon of your favorite buffalo sauce) or a quick aioli sauce (1/4 cup of mayo + 1 tablespoon of lemon juice + 1/2 teaspoon of garlic powder). Trust me, these will be gone before you know it!
As a reminder, don't forget to always use salted butter!
